Mash together:

  • 2-3 cloves of garlic, minced
  • juice of one lime
  • 2-3 avocados
  • salt and pepper
  • two spoonfuls of good salsa

if the salsa is not hot enough, add hot sauce (such as Delida's green)

Pico de gallo (otherwise known as salsa)

mix together and adjust to taste:

  • several ripe tomatoes, chopped
  • bunch of finely chopped fresh cilantro
  • juice of one lime
  • 2-3 cloves garlic, minced
  • a little finely chopped onion
  • 1-2 chiles, serrano or other, seeded and minced
  • salt

opt: finely chopped green peppers, cucumbers

Pound Cake:

Cream together: 1/2 lb/ butter, 1/2 cup Crisco, 3 cups sugar.
Add 5 eggs, one at a time.
Add 1 cup sweet milk alternately with the following ingredients:

  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt.

Lastly, add 1 teaspoon lemon extract and 1 tablespoon vanilla extract. Bake in tube pan at 325 degrees for 1 hour and 20 minutes (my old oven always takes about 10-20 minutes longer).

Cool 5 minutes before removing from pan. (Cover top with foil during cooking if it turns too brown).

Black Beans:

  • 1 lb. dry black beans
  • salt pork or ham hocks (or both)
  • 6 cups chicken broth
  • Sazon packet
  • 5 cloves garlic, minced
  • 1 onion, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 cup red wine
  • salt and pepper
  • 1 teaspoon oregano
  • sofrito
  • Lemon juice

Soak beans over night or for at least one hour. Drain, pour in crock pot with chicken broth. Saute onion and garlic in olive oil; add to beans. You may also saute six small slices of salt pork (about 1/4 lb.) or ham hocks with the onion and garlic and add to beans. Add sazon packet and salt. Cook on high all day or until tender. Half an hour before eating: add red wine venegar, red wine, more salt and pepper to taste. Add sofrito, a little lemon juice and oregano, optional. Remove salt pork and ham hocks before serving. For black bean soup, remove half of beans, puree in blender and return to mixture; serve with lime and parmesan cheese on the side.

  • 1 teaspoon sugar
  • 1/2 Tablespoon lemon juice
  • Stir sugar and lemon juice well
  • 2 oz. Havana Club (or other light rum)
  • Ice cubes

Fill glass with club soda
add 2 drops bitters
garnish with fresh mint leaves

Fried Chicken:

Cover pan with aluminum foil, put stick of butter on it, and put in oven while it is heating to 400 degrees.
Cut up and clean a whole chicken
Salt, pepper each piece
Dip in egg, then roll in flour
When the butter is melted, lay each piece meaty side down
Cook 30 minutes, turn and cook 30 minutes more

Oatmeal Cookies

Sift together: 1 1/2 cups flour, 1 t. salt, 3/4 t. baking soda, 1 t. cinnamon; set aside.
Combine in separate bowl: 1 cup sugar, 3/4 cup softened butter, 2 eggs. Beat until creamy.
Gradually add flour mixture alternately with 1/3 cup milk.
Stir in: 1 1/2 cups rolled oats, one 6 oz. package of butterscotch morsels, 1 cup raisins, 1/2 cup chopped nuts, and 1 t. vanilla.
Drop by teaspoons onto greased cookie sheet. Bake at 350 degrees for 12-14 minutes.

Sweet Potato Pie

  • 3 cups mashed cooked sweet potatoes
  • 1 cup sugar
  • 1 1/2 cups milk
  • 1 stick butter
  • 2 eggs
  • 1 T. vanilla

Mix all ingredients and pour into unbaked pie shell. Then mix the following topping ingredients and sprinkle on top of filling:

  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup chopped nuts
  • 1/3 cup butter

Bake at 350 degrees until golden brown (usually about 45 min., depending on the oven).
